Uplands Cheese is a dairy farm located on Pleasant Ridge in the Driftless region of southwestern Wisconsin. The farm milks cows seasonally, in rhythm with the pastures, to produce two traditional artisan cheeses: Pleasant Ridge Reserve, made with grass-fed milk during the summer months, and Rush Creek Reserve, made in the fall when the cows’ diet shifts to hay.
